These no real need to put the ingredients in an Oven Bag to cook this dish, you can easily put it all in a casserole dish.  Although an Oven Bag does save on the washing up…………

Ingredients: ½ oz flour = 15g, 1oz butter = 30g, 4-6oz sultanas = 125-185g, ½ pint = 300ml wine/stock & marsala/sweet sherry

 

CHICKEN, CAULIFLOWER & BACON GRATIN

I know why Mum cut this recipe out and saved it, she really liked cauliflower.  Some people might think cauliflower is a bit bland, but it’s really very versatile.  It’s great topped with a white sauce and cheese, soaks up curry sauces deliciously, you can roast it with a little oil and of course just boil it.  This is the first time I’ve seen it used in a recipe like this, but I think it should taste quite good this way.

Being able to assemble this recipe the day before and then put it in the oven when you need it can be a great advantage.  When Mum made it she would just use tinned corn, but she did add fresh capsicum, which she fried up with the onion and garlic.

CHICKEN RISOTTO

What is the difference between a chicken risotto and just chicken and rice?  Is risotto just a modern and must more difficult way to cook a rice dish?  I don’t know the answer, but when you see an old recipe like this which is quick and easy it does make me wonder.

I’ve already posted a few recipes that use chicken and ham, but they go together so well and the combination is so well liked by everyone I just can resist adding this one to the collection.  I think using a bought cooked chook (such a great Aussie word for chicken)  would add lots of flavour and make this bake really easy.

I think this was one of the first dinner party dishes I made after I got married.   It was quite modern then with the wine, garlic, oregano and peppers and tasted great.  I’m not sure where I got the recipe from, but I can see from the typing  that I typed it up on a manual typewriter, probably at work, and here I am posting it on the internet – how the world has changed!!!!  It served me well all those years ago, but I haven’t made it for awhile.  Perhaps it’s time to give it another go.

HAM & CHICKEN CASSEROLE

Looking through Mum’s recipes I found a few versions of a Chicken & Ham Casserole/Bake.   I was going to use one of them here, but really the one I make is so good and very much loved by my family, especially my son, I thought I should use it instead.  I’m not sure where I got the recipe from and I have adapted it slightly over the years.  I don’t joint the chicken I pull the cooked chicken off the bone as you can see I make it without the paprika and I leave the parsley off.  I hope you enjoy it as much as we do.  (for the measurements ½ lb = 250g)
