I can’t decide if these are pancakes or patties as there doesn’t seem enough flour in them to make them pancakes. Don’t really think it matters though as it still a great way to eat vegetables.

BAKED VEGETABLE PARCELS
This is a quick and easy vegetable only dish and would be great if you’re looking for a meat free night or something to serve vegetarian friends. Of course, you could also serve it alongside a juicy steak or lamb chops………..
CARROT, WALNUT AND PINEAPPLE MUFFINS
Not sure these are muffins you’d make for the kid’s lunch boxes, but they’d be a stunner for visitors to have with coffee.
CHICKEN AND VEGETABLE PASTA PIE
In this recipe cooked pasta with a cheese and mustard sauce is pressed into a pie dish and baked to form a crust. The filling of chicken, leek, carrot and zucchini is added and then topped with more of the pasta mix. A quite different sort of chicken and vegetable pie.
CLASSIC MINESTRONE
I’m deviating from Mum’s recipes this week because I made a pot of this minestrone soup for my family last Sunday and everyone said I should add the recipe to the collection. I always make it the day before up to the marked area, then reheat it the next day and add the pasta. If you add the pasta too early it can get a bit gluggy.
RISSOLE AND CHEESE CASSEROLE
This looks like a great way to jazz up beef rissoles. It makes an easy and fairly inexpensive family meal and I especially like that the rissoles have carrot in them and parmesan cheese extra flavour.
MEATLOAF IN A BASIN
Most meatloaves I know of are baked in a tin or hand molded into a loaf shape. This is the first time I’ve seen a recipe that steams the loaf in a basin, but trust Mum to have cut out and kept something different. The combination of potato, carrot and onions together with sausage meat and some spices in this recipe should make for a tasty loaf.
BEEF AND PASTA BAKE
This is a nice meaty pasta bake with carrot, celery and mushrooms cunningly hidden to fool those picky eaters. I like that you can make it and freeze it as it’s always great to have something in the freezer for those busy or lazy nights when you just don’t have time or feel like cooking.
SPICY POTATO SOUP
This is a good combination of sweet potato (kumara) and plain potatoes. When you add in the extra vegetables and all the spices then serve it up with some Turkish bread you’ve got a great winter warmer
BANANA AND CARROT CAKE
This is a bit of a twist on the usual carrot cake. No eggs needed and a great way to use up very ripe bananas, which is always useful.
