This Chicken Bake is an old one of Mum’s easy to make casseroles. With the crunchy topping it works well either for the family or for entertaining.

TOMATO HERB CHICKEN
Over the summer we all get a little tired of barbecued chicken, this oven cooked tomato herb chicken makes a change and when served with a salad is still light and summery.
CHICKEN NUGGETS
These Chicken Nuggets might take a bit more effort to make, but I’m pretty sure that they’d have a lot more flavour than the bought ones. They be could for the kids, but you could also make smaller ones to serve as finger food at a party.

As you can see Mum’s cut this recipe off the back of a packet of Cream of Chicken soup mix. It’s a really simple patty recipe that you could add other vegetables to if you wanted, but would be nice with just the potato and shallots.
BAKED LEMON SOY CHICKEN
Although this recipe says to use a whole chicken and cut it up yourself, it would be much easier to use chicken pieces. As you don’t have to fry the chicken before putting it in the oven-proof dish, this is really quite a quick and easy meal for a family dinner.

CHICKEN SUPREME
I’ve been making this recipe for years, but until now hadn’t seen a recipe for it, Mum just told me how to make it. When I found this in her collection I realized I’d found where her initial inspiration. It’s so simple to make and tastes great.
CHICKEN BAKED IN BARBECUE SAUCE
Chicken wings, drumsticks or thighs work really well in this recipe. The sauce has a great tangy flavour and you can serve it as a family meal or a party dish.
HOT CHICKEN & ASPARAGUS ROLL
This recipe comes from the back of the Pampas Ready Rolled Puff Pastry pack. Originally Mum had to hand make any pastry she used, so the advent of prepared pastry was almost as good as sliced bread. The first type of prepared pastry came in a block and still needed rolling out which was a bit of a chore, then someone had the great idea of ready rolled sheets and using pastry became a lot easier.
STUFFED CHICKEN ROLLS
I think Mum taught me well, because like her when I’m entertaining I always like to have everything prepared in advance and leave only a few things to be done when the guests arrive. What I like about this recipe is that you can prepare the chicken up to stage 4 and then cook and serve the rolls when your guests arrive. It would work well with either a salad or vegetables and that makes it very versatile.
