I’ve filled chicken breasts with ham and Swiss cheese and baked them, but I’ve never coated them in almonds and Swiss cheese. Now I’ve found this recipe I’m going to give it a try. I think I’ll line the tray with baking paper though to stop them sticking.
Over the summer we all get a little tired of barbecued chicken, this oven cooked tomato herb chicken makes a change and when served with a salad is still light and summery.
I think Mum taught me well, because like her when I’m entertaining I always like to have everything prepared in advance and leave only a few things to be done when the guests arrive. What I like about this recipe is that you can prepare the chicken up to stage 4 and then cook and serve the rolls when your guests arrive. It would work well with either a salad or vegetables and that makes it very versatile.
Lemon chicken is something of a classic chicken recipe and this is a version that Mum cut out from the Herald Sun. Twice frying the chicken makes it lovely and crunchy and topped with the sauce the whole thing is delicious.
