CHOCOLATE CHEESE BROWNIES

Here’s another of Mum’s pinned together recipes.  If I’d realised that there was a cellotape shortage in her kitchen I would have donated a couple of rolls to her bottom drawer.  I guess at least the pins kept the recipes together and saved pieces getting lost.  If that had happened we’d never have had this Chocolate Cheese Brownie recipe to enjoy.

APPLE CRUMBLE

My guess is that this recipe was one of the original ones Mum started out with after she married in 1941.  I wouldn’t be surprised if it came from my paternal grandmother, who Mum lived with while Dad was overseas in the airforce during WW2.  The piece of paper looks very well used.

Apple Crumble

APPLE CRUMBLE

  • ½ cup of Self Raising Flour
  • 3 tablespoons sugar
  • 2 tablespoons coconut
  • 1 tablespoon butter

Mix together to make the crumble.  Cook apples, let cool and put crumble on top.  Bake in a moderate oven 180o until the crumble is brown, about 30 mins.

SPICED BANANA PUDDING

Thel was one of Mum’s golfing friends and a very good cook, there’s a few of her recipes scattered throughout Mum’s collection.  This banana pudding would have appealed to Mum as she and Dad both liked bananas, there were always some in the fruit bowl.  This pudding would have been a good way to use up those that had ripened just a little too much.

Spiced Banana Pudding

SPICED BANANA PUDDING

  • 1 cup plain flour
  • 1 teaspoon baking powder
  • 4 tablespoons sugar
  • 2 tablespoons melted butter
  • ½ teaspoon salt
  • 1 egg
  • 3 tablespoons milk
  • 3 bananas
  • extra butter
  • 1 teaspoon cinnamon
  • 1 teaspoon grated orange rind

Sift flour, baking powder and salt, add half the sugar.  Fold in beaten egg mixed with milk and melted butter.  Pour into greased slab tin, top with banana slices, brush with extra melted butter.  Mix balance of sugar with orange rind and cinnamon, sprinkle over bananas.  Bake in mod oven 30-35 mins.  Serve hot or cold with cream or ice cream.

 

LEMON TART

I’ll admit that sometimes when I don’t have a lot of time to spare I buy a lemon tart from my local cake shop, but this old recipe of Mum’s reminds me that making your own isn’t all that hard.  The advantage of making it yourself is that you can give it a bit more lemon flavour, bought ones are usually a bit sweeter and don’t have that real lemon kick.
