GINGER CREAM SQUARES

This dessert recipe from the New Idea is an interesting take on the old chocolate ripe cake from the ’60s.  Not sure you’d get away with it only costing $3.50 to make these days, but it would still be an economical dessert for 6 people.

MEATLOAF IN A BASIN

Most meatloaves I know of are baked in a tin or hand molded into a loaf shape.  This is the first time I’ve seen a recipe that steams the loaf in a basin, but trust Mum to have cut out and kept something different.  The combination of potato, carrot and onions together with sausage meat and some spices in this recipe should make for a tasty loaf.

QUICK CHOC-CARAMEL SLICE

I like the combination of ingredients in this slice recipe.  Caramels, chocolate, peanuts and rice bubbles sound like they’d go well together.  If you were worried about adding in the peanuts it would be quite easy to double up the chocolate, can’t see why that would be any sort of problem.

CASSEROLED LAMB CHOPS

It’s winter and what could be better for a family meal than an old style lamb casserole.  This one needs very little preparation, just trim the chops, coat them in flour, chop up an onion put the lot in a casserole dish and cover with the combined flavorings. Put the dish in the oven and forget it for 2 hours while you get on with all the other things you need to do after a long day at work.

NO BAKE PARTY CAKE

I found this unusual birthday cake recipe among Mum’s Herald Sun cutouts.  She must have been quite taken with it as she cut out around the picture, although I’m sure she never made it.  I really wish it was printed in colour as it must look quite good with the red, yellow and green jelly cubes inside.  Not quite sure what it would taste like though, but if you’re looking for a kids cake you don’t have to spend hours decorating this might work for you….

FRENCH PARCELS

I’ve been making these for years, but I’m not sure I’ve ever seen a recipe for them before.  I think Mum just told me what to do and they are so quick and easy no recipe was needed.  You can use chicken instead of steak if you like, but the juice from the meat makes the French Onion Soup taste better.  Be warned it’s very hard to resist licking the foil when you’ve unwrapped them…………..
