Who doesn’t love a Caesar salad (with or without the anchovies)? This is the first time I’ve seen rice added though. Even without adding some cooked chicken or salmon it would be a meal in itself.

The crunch of the taco shell with the salad and salmon in this recipe would work really well. A lighter alternative to the usual taco mix.

Mum made quiches with lots of different ingredients, but I think this crustless one with Chorizo sausages was was a bit of a departure from her usual style. I think she would have found it quite a change from the bacon or ham she usually used.
