BANANA CAKE

As you can see this recipe comes from one of Mum’s original handwritten notebooks.  It’s hard to read so I’ve rewritten in out down below.  These days there’s lots and lots of different Banana Cake recipes, but this old one was way before you could buy sour cream, so you had to make your own sour milk by adding lemon juice to warm milk.  Easy to do and it makes a lovely moist cake.

MOCK FISH PATTIES

I guess these are the old version of American Hash Browns, maybe not quite so crunchy, but just as delicious.  Mum’s being making them since I was a little girl and they’ve always been one of my favourites.

The old recipe is a bit faded at the edges but reads:

MOCK FISH PATTIES

  • 2 cups grated raw potato
  • 1 dessertspoon finely minced onion
  • 2 rounded tablespoons plain flour
  • ½ teaspoon salt,
  • 1 egg
  • pepper
  • 1 teaspoon chopped parsley
  • 1 dessertspoon anchovy essence (optional)

Combine potato with onion, flour, salt, pepper & parsley.  Add unbeaten egg and anchovy essence.  Mix well, drop spoonfuls in hot fat & fry until golden brown on both sides.  Flatten each piece with back of spoon as it cooks.

BRANDIED FRUIT FOR ICE CREAM

For quite a few years this was one of Mum’s favourite dessert recipes, probably because Dad liked it on his nightly bowl of ice cream.  Everytime I looked in their fridge there seemed to be a jar there marinating.  I think with the addition of a few other fruits it could still be good today.

COCONUT ROUGH SLICE

I don’t remember Mum making lots and lots of biscuits, but she did make quite a few slices in her time.  Unbaked ones like this one were always a favourite, especially in summer when using the oven heated up the kitchen too much.  These days with air conditioners that isn’t so much of a problem, but unbaked slices are still a quite a good way to make a sweet treat.
