For quite a few years this was one of Mum’s favourite dessert recipes, probably because Dad liked it on his nightly bowl of ice cream. Everytime I looked in their fridge there seemed to be a jar there marinating. I think with the addition of a few other fruits it could still be good today.
I don’t remember Mum making lots and lots of biscuits, but she did make quite a few slices in her time. Unbaked ones like this one were always a favourite, especially in summer when using the oven heated up the kitchen too much. These days with air conditioners that isn’t so much of a problem, but unbaked slices are still a quite a good way to make a sweet treat.
I’m pretty sure that Mum did make this Potato salad though. The combination of potato and bacon would have been a winner for her, it’s always a great flavour combination.
This salad would have seemed bit exotic to Mum back in 1997, she may well have eaten it and she obviously intended to try making it as she cut it out of the magazine, but I think the combination of the different parsley and the burghul, might have been just a bit much for her. She was after all nearly 80 by then.
This is a really common salad these days and especially loved by my husband, but I’m not sure it was made all that much back in 1997 when Mum cut this recipe out of a magazine. I doubt that Mum even knew what Cos lettuce was as her salads were always made with Iceberg Lettuce.
I think Mum’s Egg and Bacon Pies were my favorite and the best thing to take on a picnic, but as well she made this Corn Pie. This was more for at home lunches. It makes quite a large pie and is great with a salad.
Back in the 1980s we used to holiday with a group of friends every Easter. Everyone would take and make dishes which we would all share. One the the girls made this Tortellini salad, it was the first time we’ve ever tasted tortellini used this way and we all loved it. When we got home she shared the recipe with all of us.
On the same sheet as the American Potato Salad was this Italian Salad. This at least had pasta as it’s base, which does give it an Italian style. Using pasta in a salad was still fairly unusual when this was published in 1991 and I certainly don’t think Mum had ever made a pasta salad at that stage.
Potato Salad has been around for a long, long time, but I thought it interesting that Mum had this American Potato Salad in her collection. As far as I can see the main thing that is different from our home grown Australian versions is the dill pickles.
As my husband says, like mother like daughter, I scribbled this recipe down on a piece of paper one night after eating them at a friend’s house. Sadly he passed away recently, so in honor of a great fellow and a good cook here’s his recipe for Oven Dried Tomatoes.
