This is a favourite lamb casserole of mine, I’ve been making for years. The curry powder, ginger and sauces work really well together with the lamb and the pumpkin. It’s very tasty combination.

AFTER DINNER MINTS
Homemade dinner mints, very 70s. Don’t think they’d be a patch on the bought chocolate ones, but maybe if you coat these with a layer of chocolate instead of the coconut they’d been worth doing.
LAYERED EGGPLANT AND TOMATOES
This 1990s recipe comes from a collection printed by The Australian Women’s Weekly – Delicious Vegetables from the Microwave. Two things give its age away. One, it mentions the wattage of the microwave something you don’t see in recipes now and two, it shows you how to salt and drain the eggplants, which you now longer need to do. Despite those things it’still a nice easy vegetable dish.
RICE VEGETABLE PIE
I found this recipe in the collection and thought it would make a very hearty vegetarian dish and then realised it would also work as a gluten free dish. The rice/egg/parsley base is a good substitute for flour based pastry.
SALMON PUFF
This salmon recipe says it’s good hot or cold. Cold it could good for picnics or even school or work lunches.
ROCKY ROAD SLICE – No Bake
This is another easy slice to make and is great because it’s no bake and can be kept in the fridge until you need it.
EASY CHOCOLATE BROWNIES
There’s lots of Brownie recipes available and I’ve already posted some myself, but I like this one as it needs no beating and it’s made in just one bowl. That means that by the time the kids lick the bowl and spoon there’s hardly anything to clean up.
MOCHA CAKE – No Bake
This is another of Woman’s Day’s No-Bake cakes. I think they’re a great idea for a do-ahead dessert either for the family or when you have friends visiting.
LEMON BUTTER FISH
It’s a bit strange to see this 70s recipe using tinned carrots and tinned stir fry vegetables. The article says ‘hearty meals – don’t have to mean hours of work”, but I think using apacket of prepared fresh vegetables, that are available now in the supermarket, would be a lot tastier and just as easy.
BANANA BISCUITS
These could be a fairly healthy biscuit for the kids during the school holidays or as they’re pretty easy to make they might even be a good holiday activity. They won’t keep long with the mushy bananas inside, but they probably won’t last long with the kids around anyway.
