Everyone has a quick pasta recipe these days and at first glance this one doesn’t seem all that unusual, but back when Mum cut this one out it was a fairly new idea for her. At that time the only pasta dish she made spaghetti bolognese.
If you make up the Casserole Base, divide the mixture and freeze it, then when you need it it’s pretty easy to jazz it up by adding some tomatoes, garlic, herbs and lemon juice. If you’ve got time to make the Olive and Fetta Bread then voila – you’ve got a Greek style meal!!!
Among Mum’s recipe collection I’ve found a great sheet put out by the Pampas pastry people. It has lots of Finger Food Recipes so I thought with Christmas entertaining fast approaching I’d share some of them with you. Pinwheels can be made with a variety of fillings, but I think this pizza one will appeal to kids of all ages.
Mum made quiches with lots of different ingredients, but I think this crustless one with Chorizo sausages was was a bit of a departure from her usual style. I think she would have found it quite a change from the bacon or ham she usually used.
This recipe is probably how we really think of meatballs, Italian style, served with pasta. I’m not sure Mum would have put the olives in as she and Dad didn’t like them, but I think they are the ingredient that makes the Italian difference.
