I think the combination of salami, sweet corn, bacon, tomato and onion makes these little quiches very tasty. They’re great to pop into a lunch box or to take out on a picnic.
This is a dessert that Mum made often, without the brandy though. I can remember her placing a large plate of them in the center of the table for us all to help ourselves. My mouth is watering at the thought of how we’d squash down the crunchy fritters and sprinkle white sugar on the top – they were yummm.
Back when I was little these were a family favourite, especially in the winter. Now I’m older I can see why – they are sweet, filling, cheap and also quick and easy to make. They can be a bit stodgy, but a light touch will give you a light, fluffy and richly flavoured dessert, which is especially good with some runny cream on top. Great on cold winter nights.
This recipe is great for when you don’t have a lot of time and need to feed the family quickly. Traditionally Mum used to make it on a Sunday night.
EASY QUICHE
Beat eggs – add other ingredients. Mix together well. Pour into greased dish. Bake moderate oven for ½ hour.
