A friend was giving lemons away this morning, so it seems like a good time to share this recipe. The filling is a coconut lemon curd and sounds yummy. I also like the idea that you can freeze any leftovers, if there are any that is!!
These would be great at a party or to have with drinks before dinner. However you serve them, they’re quick, easy and tasty.
This recipe is another one from the Pampas Pastry Finger Food Recipe sheets. I’ve just checked to see if Pampas still make sweet tart cases and apparently they do – I just haven’t seen them around lately. If you can’t buy them you could make your own using pastry sheets.
Taking my lead from the Great British Bake Off I feel I have to say – “It’s Scone Week” as I’m going to post five different scone recipes. Mum was a great scone maker so I wasn’t surprised to find this many recipes in her collection. This first one is the basic mix and then Cheese, Pumpkin and Savoury variations.
Winter is only four days away here in Victoria, so it’s time to start thinking of hearty winter casseroles. The combination of tomato sauce, vinegar, curry powder and brown sugar in this recipe reminds me of another one I make, which has pumpkin instead of the potato in it. The good thing with this recipe is that you probably have all the ingredients in the cupboard so it can be a last minute decision to make it.
I’ve posted recipes for lots of different fruit cakes since I started this blog, but have just realized that a Pumpkin Fruit Cake recipe is missing from the collection. Mum and I have both made the pumpkin version over the years, we didn’t use wholemeal flour, but either way the pumpkin is a nice touch to the traditional cake.
These are change from the more traditional lemon curd tarts. The meringue topping combined with the orange curd makes a great combination.
I was hunting through Mum’s old recipes looking for something quick and easy to make for morning tea at Mum’s retirement village this weekend and came across this recipe. I doubt anything could be much easier.
Mum saved this recipe from her bowling magazine, which published the same sort of down to earth recipes as the old PWMU Cookbooks that every woman had copy of back when I was growing up and every young cook, as I was back in the 1970s, was given. The cookbook was a fund raiser for the Presbyterian Womens Missionary Union and was full of recipes and useful hints. Along with everything else cookbooks have changed a lot since those days, but I still sometimes hunt through my copy for a good chutney or jam recipe.
You can tell this an 80s recipe by the lovely wooden bowl and spoon in the picture. Not convinced that the spoon would be much good for getting the casserole out of the bowl though. Think a more modern metal one would do a far better job.
