ASPARAGUS OR LEEKS WITH PARMESAN

I love it when asparagus comes back into season each Spring and enjoy eating it as a vegetable, in salads and in stir fries, but I think served like this it would make a terrific first course.  Mum and Dad both loved asparagus so I can see why Mum cut this recipe from the Herald Sun.  The leek version sound good as well. Neither of Mum or Dad were wine drinkers though and I doubt they’d ever head of the matched Chateau Tahbilk Marsanne wine.  I guess if you could get a bottle of the 1999 vintage for $13 now you’d be doing very well.

IRISH POTATO CAKES

I can hardly boast that this is an old Irish recipe passed down through the family, because Mum doesn’t have any Irish ancestors.  Even so, I like the sound of these baked instead of fried potato cakes.  I started off thinking that they would be little less fattening until I came to the last part about splitting them in two and spreading them with butter….   Despite that or maybe because of it – they sound great.

CHICKEN, CAULIFLOWER & BACON GRATIN

I know why Mum cut this recipe out and saved it, she really liked cauliflower.  Some people might think cauliflower is a bit bland, but it’s really very versatile.  It’s great topped with a white sauce and cheese, soaks up curry sauces deliciously, you can roast it with a little oil and of course just boil it.  This is the first time I’ve seen it used in a recipe like this, but I think it should taste quite good this way.

GOLDEN POTATO SALAD

This another of Mum’s recipes that she’s pinned together when she couldn’t find the cellotape.  It was probably published before mayonnaise in all it’s different varieties was available in the supermarket.  If you don’t want to go to the trouble of making the mayonnaise use about a cup of a plain bought one and add the mustard and parsley.
