As a child I loved going to stay at my Auntie Elsie’s as she would always make salmon patties for me, I loved them. I’ve never managed to make any as good as hers and they certainly weren’t as fancy as these ones that John West published years later. The closest here is the Australian version minus the corn or lemon.
I’m not quite sure what makes this Finnish, but as I’ve never been to Finland and know very little about their food I guess it could be from there. Wherever it’s from I do like the idea of mashed potatoes, mushrooms and onions baked together.
The combination of fish, spinach, mustard and mashed potato make this recipe look really good. I don’t think Mum ever made it, but I’m sure she meant to one day…..
