I’ve always wondered why this is called Mincemeat when it obviously doesn’t have any meat in it, but as you can see from this very old recipe it’s been called that for a long time. Mum used to make a batch each Christmas for her fruit mince pies and while buying them from the supermarket is not a lot easier now, they somehow don’t have the same flavor.

CASSATA CHRISTMAS PUDDING
The easy way to make a Frozen Christmas Pudding is just to soak fruit in brandy and stir it through softened bought ice cream and then re-freeze it. While this recipe does use bought ice cream it takes the frozen pudding concept a bit further by separating the three colors in neopolitan ice cream adding cake and Marsala soaked fruit which turns it into a Cassata Christmas Pudding. Now I’ve found it in Mum’s collection I’m thinking of making it myself this Christmas.

CHOCOLATE CORNFLAKE SLICE – Kiddies Delight
I guess Mum couldn’t find the cellotape when she saved this old newspaper cutting and instead used a pin to keep the two sections together. Unusual perhaps, but it’s done the job for all these years. I’ve taken the liberty of renaming the recipe as I didn’t think Kiddies Delight was enough of a description for it, but whatever it’s called I think kids would love it.
CHOC-MALLOW FUDGE
It’s that time of year again when schools, kindergartens and child care centers are having their end of year activities which from my experience always means that parents have to take along a plate of food. Strangely, good wholesome things don’t seem to be that popular, but something like this chocolate and marshmallow slice should be a hit with the kids.
EASY PLUM TART
While making a pie or tart from scratch using your own home made pastry is great sometimes it’s just a lot easier and quicker to use bought pastry. This plum tart recipe uses sheets of puff pastry which are blind baked before the filling is added. Blind baking isn’t particularly hard to do, but some people find it a bit daunting. Although Mum must have blind baked quite a lot of pies in her day I like that she took the trouble with this recipe to still set out the steps needed.
PEANUT HONEY SLICE
I know that cooking with nuts is not as popular these days because of all the allergy problems, but I thought this old recipe was still worth adding to the collection.
PEANUT HONEY SLICE
- 4 cups Rice Bubbles
- 1 cup peanuts
- ½ cup coconut
- 2 tablespoons honey
- 125g butter (not margarine)
- 125g sugar
Place rice bubbles, peanuts and coconut in a bowl. Boil honey, butter, sugar for 5 mins – only. Pour over dry ingredients and bake 5 mins only in 180o oven. Mark while hot and recut when cold.
