I almost missed this gem which was on a Herald Sun newspaper page. Mum stuck mostly to the old style potatoes, which in her day were just potatoes and only came washed or unwashed, big or small. Nothing like today’s variety. I think this recipe looks good, a great way to jazz up sweet potato.

FRENCH ONION POTATOES
SWEETCORN PATTIES
MOCK FISH PATTIES
I guess these are the old version of American Hash Browns, maybe not quite so crunchy, but just as delicious. Mum’s being making them since I was a little girl and they’ve always been one of my favourites.
The old recipe is a bit faded at the edges but reads:
MOCK FISH PATTIES
- 2 cups grated raw potato
- 1 dessertspoon finely minced onion
- 2 rounded tablespoons plain flour
- ½ teaspoon salt,
- 1 egg
- pepper
- 1 teaspoon chopped parsley
- 1 dessertspoon anchovy essence (optional)
Combine potato with onion, flour, salt, pepper & parsley. Add unbeaten egg and anchovy essence. Mix well, drop spoonfuls in hot fat & fry until golden brown on both sides. Flatten each piece with back of spoon as it cooks.

This salad would have seemed bit exotic to Mum back in 1997, she may well have eaten it and she obviously intended to try making it as she cut it out of the magazine, but I think the combination of the different parsley and the burghul, might have been just a bit much for her. She was after all nearly 80 by then.

TORTELLINI SALAD
Back in the 1980s we used to holiday with a group of friends every Easter. Everyone would take and make dishes which we would all share. One the the girls made this Tortellini salad, it was the first time we’ve ever tasted tortellini used this way and we all loved it. When we got home she shared the recipe with all of us.
ITALIAN SALAD
On the same sheet as the American Potato Salad was this Italian Salad. This at least had pasta as it’s base, which does give it an Italian style. Using pasta in a salad was still fairly unusual when this was published in 1991 and I certainly don’t think Mum had ever made a pasta salad at that stage.
