Although Mum always made a hot Christmas Pudding I found this recipe for a frozen pudding in her collection and while it’s similar to my version it has some different ingredients and I’m sure would taste great.
While Mum always made a traditional hot Christmas Pudding I started making frozen ones back in the eighties. This is the first one I made and I still think it’s a great recipe as it shows clearly how to line the bowl and successfully cover the pudding with chocolate.
I think this recipe came from my sister-in-law’s grandmother. Mum’s mother died when she was quite young and no recipes from her seem to have survived. The addition of mashed potato makes this fruit loaf a bit unusual.
You either love it or hate it. My father hated it as he had it once too often as a child, but Mum still made it for us. Served up with cream it’s a great winter dessert. Needless to say this is not Mum’s original recipe, but the addition of dried fruit would make it extra tasty.
I think the comments that go with this recipe that Mum cut out of the newspaper make it sound somewhat unusual “economical, keeps for ages and can be made as a cake”. Worth a try maybe?
I can remember Mum having these in the biscuit tin when my brothers and I came home from school ravenous. They still taste good and while they’re still great to have in the tin when the kids get home, adults done mind them either.
The old no bake slices were a quick and easy way to make something sweet for the family or visitors, especially in summer when you didn’t want to heat up the kitchen by using the oven. This one uses condensed milk and Marie biscuits and has flaked almonds on the top. If the almonds are a problem for you I’m sure you could use dried fruits or even choc chips instead.
