CAMEMBERT HOT BREAD

This recipe comes from a recipe sheet put out by Continental Kitchen the makers of packet soup mixes.  The sheet also has lots of dip recipes using French Onion Soup, Cream of Mushroom soup and Cream of Chicken Soup – all very 1980s.  This recipe with camembert cheese spread onto a bread stick and then baked was quite popular as a pre-dinner or party nibble.

BEEF ‘N’ BEER

Neither Mum or Dad were beer drinkers, but there was usually a bottle in the fridge for visitors, sometimes it would sit there for a bit too long and not be fresh enough to serve.  So this recipe was great for using up the odd ‘stale’ bottle.  It makes a very hearty winter casserole.

SWEET POTATO WITH SOUR CREAM AND BACON

I almost missed this gem which was on a Herald Sun newspaper page.  Mum stuck mostly to the old style potatoes, which in her day were just potatoes and only came washed or unwashed, big or small.  Nothing like today’s variety.  I think this recipe looks good, a great way to jazz up sweet potato.

CHEESE YUMMIES

By the look of this cutting Mum cut it out of a magazine quite a while ago.  I don’t remember her making them, but they look great and are something a little bit different to serve with drinks.  I usually make little cheese biscuits or pita bread crisps, but I think these look good and I’m going to try them next time.

TORTELLINI SALAD

Back in the 1980s we used to holiday with a group of friends every Easter.  Everyone would take and make dishes which we would all share.  One the the girls made this Tortellini salad, it was the first time we’ve ever tasted tortellini used this way and we all loved it.  When we got home she shared the recipe with all of us.

CHOCOLATE RUM TRUFFLES

Every Christmas I make these Chocolate Rum Truffles and the next recipe Apricot Coconut Balls. When my children were little I used to make them, put them in jars and give them to their teachers as a Christmas gift. I’ve kept making them ever year since.  The recipe came from a newspaper cutting that I pasted into my folder years ago. As we don’t read the same newspaper I was really surprised to find the same cutting in Mum’s collection.  I’m now wondering how I ended up with it, but I’m glad I did.

HEALTHY FRUIT LOAF

Mum made lots of different types of fruit cakes, loaves and slices and adding pumpkin to the mix wasn’t that unusual. The only unusual ingredient in this recipe is the apricot nectar, not something that you’d normally put in a fruit cake and not something you’d usually have in your cupboard. If you wanted to you could easily substitute it with fruit juice or water.
