This isn’t a dish for my family as they don’t like recipes that have a meat and fruit combination, which is a shame as I think it would be worth trying. The chilli kick in the base and the coconut in the topping certainly add a lot of interest.
Mum keep a page of lamb recipes from the Herald Sun dated July 1, 1997, this recipe baking the lamb in chilli and beer caught my eye. Not sure if I’ll give it a try, but you might like to.
Vegetarian recipes weren’t something Mum would have been looking for on the pages of the Herald Sun. Growing up I can’t remember anyone among our family or friends who didn’t eat meat, so cooking vegetable only dishes just wasn’t necessary. This recipe is on a page Mum kept from the paper that had pork, lamb, sausage and fish casseroles on it, so the recipes were around, they just weren’t something Mum made.
I like the little note that Mum’s written on the top of this cutting – Like a Quiche – which suggests she either made it herself or it was made by someone else and she liked it. It does seem to have a strange combination of ingredients, especially the cabbage, but it could be worth a try.
