I guess you could rename these Coconut Macaroons, maybe not quite the traditional ones that you make with condensed milk, but still a quick and a gluten free treat for everyone.

DRIED APRICOT ROLL (No Bake)
Another one from Mum’s bowling club days….. If you leave the nuts out and increase the amount of marshmallows these could be a fun lunchbox filler or slice to go with coffee.
MINI LEMON TARTS
Little tarts like these always remind me of the afternoon tea parties Mum used to have with her friends. I’m not sure she made these particular tarts, but the sight of the pastry, filling and cream somehow brings back memories of getting home from school and being allowed to eat the leftovers…………..ahhhhhhhhhhh………..delicious memories.
FRUIT PINWHEELS
I always think of pinwheels being savoury not fruity and sweet, but this recipe is a great idea. With the apple in them they might go a bit soggy if you leave them in the tin too long, but I hopefully they’d be eaten before that could happen.
TRUFFLES
I couldn’t resist adding this recipe for Chocolate Truffles to make for the festive season. In our house you can’t have too many rum balls, apricot balls or chocolate truffles – the more the merrier.
CHOCOLATE SURPRISES
Marshmallows, coconut and chocolate with a few nuts added – a great sweet treat for Christmas entertaining. Although I think I’d be tempted to change the walnuts for some glace cherries just to make them even sweeter.
EASY MELT SHORTBREAD
With most shortbread recipes you rub the butter into the flour and then add the other dry ingredients which takes a little bit of time. Melting the butter instead is certainly an easier option and a whole lot quicker, not traditional, but quicker…..
FRUIT MINCE PUFFS
I’ve changed the name of this recipe as I don’t think Crumble Puffs is a very good description. They seem like a very light fruit mince tart to me – light and fluffy and fruity. Just right for this festive season.
DATE PILLOWS
These are probably my husband’s favourite type of bought biscuit. I must admit I’ve never considered making them for him as I always though they were too difficult. This recipe doesn’t look that hard though so I guess I’ll now have to give them a go.
CHOCOLATE (NUTELLA) PALMIERS
I’m absolutely sure that when Mum saved the Pampas pastry leaflet that this recipe comes from she had no idea one of her great grand daughters would be having Nutella on her toast whenever she comes to stay with us. Mum also would never have expected to be able to buy Nutella pizzas, donuts, cheesecakes, etc. It’s a great example of how things have changed in the last 30 years…….
