It’s back-to-school next week for schools here in Victoria so I thought these Vegemite Muffins might be something for their lunchboxes. I’d probably leave the green capsicum out as not all kids like the green stuff, but the vegemite and cheese combination should win them over.
I don’t know if you want to serve this as a dessert or just eat it yourself. It can be made up to a week ahead and the caramel sauce frozen until you want it. Ymmmmmmmm.
Some years ago we were spending Christmas at a holiday house on the NSW south coast and our son decided to bring his girlfriend. That was no problem until it came to cooking Christmas lunch – she was a vegetarian………. Vegetarian Christmas recipes were few and far between in those days and I ended up serving her a stuffed eggplant. I just wish I’d found this recipe as it’s much more colorful and I suspect she would have enjoyed it more. Especially as the power went out due to a bushfire in the area and we ended up cooking the entire meal on the bbq – it was a very Australian Christmas.
When I read this recipe my first thought was to use smoked cod, but of course that’s only one type of smoked fish. You could also use smoked trout or smoked salmon, really whichever you like best. Served with a salad it would make a great summer dish.
Mum and Dad both loved ice cream, so Mum made a lots of varieties. She added cherry ripe bars and nuts, chocolate mint bars and a lot flavours to plain ice cream, but I don’t think she ever made this super chocolate one. Chocolate ice cream, mars bars, milk choc bits, white choc bits and dark chocolate – a chocolate lover’s dream I think.
This comes from a Woman’s Day Upper Crust Treats segment. It’s a quite hearty vegetarian casserole, but I think non-vegetarians will enjoy it as well, especially the crusty topping.
I was looking for something to make to take on a picnic and found this recipe. This size is meant to be served warm with drinks, but I think larger ones would be OK to eat cold at a picnic, so I might give them a go.

When my kids were growing up providing something for them to take to be sold at their school fetes was a major headache. I’m not sure if it’s the same sort of problem these days, but I thought this compile of Fete Treats might be worth posting just in case it is. It’s from a Herald Sun feature in August 1994 and has all the major fete treats of the day printed in one place which I thought was a great idea.
This 1990s recipe comes from a collection printed by The Australian Women’s Weekly – Delicious Vegetables from the Microwave. Two things give its age away. One, it mentions the wattage of the microwave something you don’t see in recipes now and two, it shows you how to salt and drain the eggplants, which you now longer need to do. Despite those things it’still a nice easy vegetable dish.
I found this recipe in the collection and thought it would make a very hearty vegetarian dish and then realised it would also work as a gluten free dish. The rice/egg/parsley base is a good substitute for flour based pastry.
