This is another recipe from the Herald Sun cooking column. The usual recipe is for Steak Diane, but in this chicken has been used instead – it’s worth trying out to see if you like the change.

CHICKEN WITH BACON, LEEK AND MUSTARD CREAM SAUCE
This is a great recipe which it looks like Mum found in the Herald Sun cooking column. she passed it onto me and I’ve cooked it many times. It’s quick, easy and tastes great – if you don’t have any leeks you can use a brown onion, but the leek does add extra flavour.
PENNY’S LEMON CURD CAKE
This recipe came into the collection from our niece Penny. She’s a great cook and has been making this cake as a ‘special occasion’ cake for her family for quite a few years. It’s simply delicious!!
PENNY’S LEMON CURD CAKE
CAKE
- 175g Self Raising flour – sifted
- 1 teaspoon baking powder
- 175g butter – room temperature
- 175g caster sugar
- 3 eggs
- Grated rind of 1 lemon
Mix all cake ingredients together and divide evenly into two tins – cook 35 minutes in moderate oven. Cut in half when cold.
CURD
- 75g caster sugar
- Grated zest and juice of 1 large juicy lemon
- 2 eggs
- 50g unsalted butter
Place the sugar & lemon rind in a bowl, whisk the lemon juice together with the eggs then pour this over the sugar. Then add the butter cut into little pieces and place the bowl over a pan of barely simmering water. Stir frequently till thick.
Sandwich cake together with curd then ice.
ICING
- 50g sifted icing sugar
- Zest of 1 large lemon
- 2-3 teaspoons lemon juice.
THE ‘MASTER’ BEEF CASSEROLE RECIPE
Casseroles have always been a family favourite for us. Great as a family meal in winter, but also really usefully when entertaining a crowd. This Beef Casserole recipe which Mum collected from Entice magazine takes a basic dish and shows that by changing just a few ingredients you can create a different taste treat.
EASY PICNIC SLICE
Mum cut this recipe out of the Woman’s Day. It would make a great hot lunch dish as well as being easy to transport to a picnic or when you have to take something to share with family and friends.
MINI HAM FRITATTAS
Although similar to the Individual Ham & Cheese Quiches this recipe for Mini Fritattas, which Mum cut out from the New Idea, would be a great gluten free version.
INDIVIDUAL HAM & CHEESE QUICHES
These little ham & cheese quiches are great for school lunches or to take on a picnic. I’m not sure where or when Mum collected this recipe, but while the recipe will make 8 to 10 quiches I’m not sure that the cost would now be $5.
LAMB, SPINACH & TOMATO MEATBALLS
Mum seems to have collected this recipe from the Herald Sun as there is a completed crossword on the other side. Until recently Mum did the crossword every day, while she doesn’t do them now she is still does read the paper every day.
BEEF GOULASH
As well as handwritten recipes in Beb’s Recipe Drawer there were many recipes cut out from newspapers and magazines. This Beef Goulash recipe comes from the New Idea and would be a great dish on a cold winter’s day.
