CHEESY VEGETABLE PIE

Seems like when Mum tore this out of the Woman’s Day she missed the last few lines so has handwritten them on the bottom.  Her instructions read “other half 27cm” and “over with pastry.  200o C, 400oF – 40 mins”.  I’ll add my comments  – that this could be a hearty pie for vegetarians by simply substituting the bacon for extra vegetables.

SALMON LASAGNE

The beauty of all the different varieties of lasagne is that they can be prepared in advance and cooked when needed.  This is the first time though I’ve seen a salmon version.  I have a recipe for another seafood one which I make using marinara mix I buy from the supermarket and that tastes pretty good, so this one could be worth trying.

SPANISH CHICKEN AND TOMATO RICE

Mum chopped this recipe off the back of a packet of Sunrice.  The packet has a use by date of 15 Apr 2005 so it’s a fairly recent recipe as far as her collection goes.  The tomato pasta sauce also gives it’s age away.
