This is one of those pies where you combine all the ingredients, pour them into a pie dish and hey presto when you take it out of the oven the coconut, sugar & flour have risen to the surface to make a crust. The strawberry and blueberry filling is a little unusual though and the almonds on top add a lovely crunch.
Personally I’m not mad about tinned strawberries, they always seem to be too mushy, despite that this recipe looks interesting. I think it would work with fresh or frozen strawberries which are a lot firmer. I’d try it with blueberries as well.
A favourite family dessert was always Bread & Butter Pudding served with cream, this recipe is an updated version of that using croissants and blueberries. Mum cut this out of the Herald Sun, but I’m not really sure if she ever actually made it, I suspect she stuck to her well loved version.
