You don’t often see passionfruit in a slice, sometimes in the ice, but not in the slice itself. So if you like passionfruit, you’ll like this slice. Quick and easy to make and definitely worth a try.

As a Christmas fundraiser I bought a tray of lovely mangoes intending to take them to our family Christmas in NSW. Like many families around the country those plans were thrown into chaos and we spent Christmas here in Melbourne. We love mangoes, but we still have quite a few left. This could be a good gluten-free way to enjoy them.
I usually make a large Christmas pudding weeks in advance, but for some people individual ones made and eaten on the same day work better. This recipe was put out on a handy recipe sheet by Coles so all the ingredients can be sourced from there. It’s cooked in the microwave and only takes 12 minutes – very handy.
Mum must have gone to some sort of Sun rice promotion as there is quite a few rice-based recipe sheets in her collection. Not many of them are desserts though. I thought this one might work well – rice, peaches, sultanas, honey and spices with a crumble topping smothered in either cream, custard or icecream definitely has some appeal.
Traditionally Christmas cakes and puddings were made months before Christmas. I don’t ever seem to be that organised and intend to do mine tomorrow. It made me realise that it’s also time to hunt out some Christmas recipes for you. I’m surprised this one is titled ‘Traditional Christmas Cake’ as the old, traditional, recipes don’t have butter and definitely don’t have chocolate. It’s a much more modern version.
Long ago Mum gave me the recipe for homemade lemon butter, it was always a favourite when the lemon tree was producing lots of fruit. Nowadays it’s a lot easier to just buy a jar at the supermarket – doesn’t taste as good though. So for this recipe if you’ve got the time, and the lemons, you can use homemade, but if not go with the bought variety.
