I don’t know if this is the ‘best’ pasta salad, but it is pretty good. It makes a large bowl, so is great for parties and all the barbeques ahead of us over the festive season and summer.

Traditional Bubble and Squeak in our household has always been leftover mashed potatoes and vegetables fried up with an egg. This rice version is a little fancier. Although it says to bake the potatoes, kumara and carrots in the oven, I think I’d speed the process up a bit and just microwave them. You might lose a little flavour, but not enough to make much difference and it would be just that bit easier.

I always think of lentils as being a fairly recent dietary inclusion, but this recipe was printed in the Herald Sun back in the 1970s, so I’ve obviously gotten that totally wrong. Possibly the big difference these days is that you can by them in tins and don’t have to go through the extra process of cooking them – much quicker and easier altogether.
