NO-BAKE BISCUIT COFFEE CAKE
Chocolate Ripple cakes were a very popular dessert in the 70s and 80s. This recipe is similar, sweet biscuits layered with cream, although in this case you dip the biscuits in coffee to add some flavour to the plainer biscuits. Both are a great ‘make the day before’ desserts.

It’s summer so that means stone fruit are back on the shelves. Fresh juicy peaches are always delicious, but this cream cheese filled and baked dessert is a luscious way to enjoy them.

This is a great way to jazz up plain old creamed rice. If you don’t want to use tinned crushed pineapple I don’t see why couldn’t substitute any other fruit fresh fruit or even tinned apricots or peaches.

MINI FRUIT AND CHOCOLATE CHRISTMAS PUDDINGS
I usually make a large Christmas pudding weeks in advance, but for some people individual ones made and eaten on the same day work better. This recipe was put out on a handy recipe sheet by Coles so all the ingredients can be sourced from there. It’s cooked in the microwave and only takes 12 minutes – very handy.
SAGO PLUM PUDDING
I’ve spent the morning preparing the fruit for both my Christmas cake and Christmas pudding. I probably should have made them a few weeks ago, but Christmas seems to have crept up on me this year. Puddings and cakes can still taste great even if you don’t make them weeks and weeks ahead. This recipe is one of those and it’s unusual as it has sago in it. It’s also a good one for those who don’t like their pudding laced with brandy or rum.

Seems to me that when you have a dessert which has chocolate, coffee, Tia Maria, cream cheese, cream and choc-chip biscuits, the deliciousness is pretty much guaranteed……….
RASPBERRY TREAT
Mum often used to make a dessert of fruit set in jelly, she always served it in a bowl though. This is a bit fancier version as it’s cut into squares and decorated with cream, nuts and cherries and even ice cream….quite a treat.
