After all the Christmas cooking it’s great to have some easy recipes to use up all the lovely leftovers. This is another from the Herald Sun cooking page ‘Second time around’ and jazzes up plain ham and eggs.
CHRISTMAS LEFTOVERS – Mushroom and Ham Toasts
This week’s recipes come from a Herald Sun cooking page with the title ‘Second time around’. After all the Christmas cooking it’s great to have leftovers, but you do start to run out of ideas on how to serve them. These toasts can be made using ham, turkey or chicken and that makes them a winner.
CREAMY CHICKEN LOAF
As more and more Australians are deciding that a hot Christmas lunch is a bit silly in our climate, this 1970s cold Chicken Loaf could be worth trying. It has the added benefit of being made the day before and you only need turn it out and slice it on Christmas Day. A great way to cut down the stress of the big day.
CHRISTMAS PLUM PUDDING TRUFFLES
I usually make shortbread, apricot balls and a couple of different types of rum balls to celebrate the festive season, so this recipe for Plum Pudding Truffles caught my eye. Not sure I’ve got the time to make them this year, but they do sound pretty good, maybe next year.
CHRISTMAS ICE CREAM ROLL
Looking for something entirely different to serve as dessert on Christmas Day – this Ice Cream Roll could be the answer. No steaming or cooking needed, just some assembly and the Herald Sun cooking page kindly supplied photos (sadly in black and white) showing how to do it.
CHRISTMAS ROAST DUCK with BREAD SAUCE
When I was young the Christmas treat was a roast chicken this could involve killing, plucking and cleaning the bird and was a major job. There was no such thing as frozen chicken so the effort in cooking a chicken made it very special. From chicken we seemed to have moved onto turkey for Christmas, but it’s not everyone’s favourite, especially the dried out leftovers. I found this old 1968 roast duck recipe in the collection and I thought it might be of interest. It has Bread Sauce to go with it, something I’ve never tried. So maybe it’s time for a change and return to the 1960s!!!
CHRISTMAS TIRAMISU
Want to get away from the traditional Christmas pudding, which can be a very heavy end to the meal, especially on a hot Australian Christmas Day. Maybe this Christmas Tiramisu would work for you……………
MINI FRUIT AND CHOCOLATE CHRISTMAS PUDDINGS
I usually make a large Christmas pudding weeks in advance, but for some people individual ones made and eaten on the same day work better. This recipe was put out on a handy recipe sheet by Coles so all the ingredients can be sourced from there. It’s cooked in the microwave and only takes 12 minutes – very handy.
CHRISTMAS SLICE
How many functions do you go to during the festive season where it’s a case of ‘bring a plate’? This slice could be the answer. Easy to make, decorated with white icing and red and green cherries to give a Christmasy feel – job done.
