MARSHMALLOW SLICE (No Bake)

During this enforced lockdown our amazing 9 year old granddaughter has been cooking up a storm.  This week she cooked a three course meal for all of us (the four in her household, plus three visitors) which was delicious.  So when I saw this old marshmallow slice recipe that Mum kept from her bowling club, I thought it might be something she’d like to make, especially as the ingredients are everyday things that will be in the pantry.   I hope she makes it and keeps a piece for us.

CHOCOLATE AND ZUCCHINI LOAF

Last year I was looking for a recipe for a zucchini loaf to take on a family picnic.  I found this chocolate variety and decided to add a chocolate cream cheese frosting that I use on another cake.  It worked really well and was a great hit with the family.

BOUNTY DAY PIE

So what is a Bounty Day pie you’re asking……well according to Wikipedia…. ‘Bounty Day is a holiday on both Pitcairn Island, destination of the Bounty mutineers, and on Norfolk Island. It is celebrated on 23 January on Pitcairn, and on 8 June on Norfolk Island, the day that the descendants of the mutineers arrived on the island’. I guess this is a pie they make to celebrate the day, although it does seem fairly similar to a Greek beef and spinach pie – don’t suppose it matters what you call it, as long as it tastes good.

MINTED PEA SOUP

Seems like winter is approaching fast, especially with Melbourne temperatures dropping to around 12o this weekend, so it must be soup time.  Probably my favourite time of the year, although to be honest I can enjoy a mug of soup nearly any time of the year.  This recipe calls for minted frozen peas, but if they aren’t available, I sure you could add a bit of chopped fresh mint instead.

ZUCCHINI LOAF with pecans-3 ways

This Zucchini Loaf is easy to make and if you’re one of those parents home schooling your kids during this Covid19 crisis it could be a good project to give the them as part of their maths work.  The added bonus is that you get something good to eat when it’s cooked.   I admire you all, parents and kids, it’s a difficult and challenging time and you’re doing a great job.  Stay well everyone………………

VEGETARIAN COCONUT RICE TERRINE

Not sure I’d bother making this for a family meal, but when life eventually returns to normal and we’re allowed to have people over again for a meal it would be a great entree or lunch dish.  Stay well and safe everyone……………
