You could make this pumpkin dish for lunch or serve it with a roast or other main course, whichever way it’s a great way to add a bit of interest to the plain old pumpkin.

PINEAPPLE MEAT LOAF
This is a quick and easy meatloaf with a glazed pineapple topping. Using tinned pineapple slices is quite outdated now, but they do have the advantage of being available all year, are always sweet and are a lot easier than cutting up a fresh pineapple.
PEACH AND PASSIONFRUIT TIRA-MI-SU
We’re still a few months off luscious ripe peaches or nectarines being in season, but I think you could substitute tinned peaches in this recipe if you want to make it now. Tinned peaches mightn’t be quite as good, but I think you’d still end up with a pretty good tiramisu dessert.

2020 hasn’t been a year for dinner parties, but hopefully we’ll be able to entertain in our homes again soon. When that time comes, this dessert is bound to impress.

If you’re stuck working from home now and can’t stop off on your commute to the office for an ‘energy’ giving treat to get you through the day. What about baking some of these, eating all you can then freezing some for later. A bit more effort perhaps, but well worth it!

I think it’s the potato pea mash that attracts me to this recipe from the Woman’s Day, although I do like a good pie. I can see a few other uses for the potato pea mash too – topping for a shepherd’s pie, as a side dish and what about fried up with an egg for breakfast??
EASY LEMON MERINGUE PIE
Lemon Meringue Pie is my husband’s favourite dessert, but made the traditional way it’s a lot of work and so I rarely make it for him. This recipe is full of shortcuts – a biscuit base, instead of homemade pastry and sweetened condensed milk/egg/lemon juice filling, instead of a lemon curd filling. I confess I haven’t made it, but I think I’ll give it a try and see if it meets with his approval.
BBQ SEASONED SAUSAGES
The sun is shining and while here in Melbourne we can’t have everyone around for a backyard bbq for sometime yet, we can at least cook something yummy for ourselves. This recipe jazzes up the plain old sausage with a tasty filling and a bacon wrap for extra taste.
SAVORY POTATO CAKES
I don’t think you can go wrong with fried mashed potatoes however you choose to cook them. Leftover mash fried in a pan with egg and bacon is possibly my favourite, but potato cakes like these come a very close second.
EASY LEMON COCONUT TART
Years ago I used to make a dessert called Impossible Pie, like this it was a recipe that you mixed everything together and as it cooked the heavier ingredients formed a crust and the top was soft. It tasted quite good, but wish I’d had this recipe as the addition of lemon would have made it even better.
