LAYERED EGGPLANT AND TOMATOES

This 1990s recipe comes from a collection printed by The Australian Women’s Weekly – Delicious Vegetables from the Microwave.  Two things give its age away.  One, it mentions the wattage of the microwave something you don’t see in recipes now and two, it shows you how to salt and drain the eggplants, which you now longer need to do.  Despite those things it’still a nice easy vegetable dish.

CREAMED CABBAGE

My husband loves cabbage so I use it in stir fries, cook it with butter and bacon and basically add it to anything I think it will go with, but I must admit I do have trouble finding interesting way to prepare it.  Found this recipe in Mum’s collection and think I’ll try it out on him, it certainly is different.

VINE LEAVES WITH PINE NUTS AND CURRANTS

A fabulous flavour of Greece or so the Women’s Weekly said in it’s Let’s Go Greek supplement back in 1992.  Don’t think anyone would disagree with that statement.  Always a favourite at a Greek restaurant, but by the look of this recipe pretty easy to make at home as well.

MINI VEGIE AND CHEESE FRITTATAS

It’s Grand Prix weekend here in Melbourne this weekend.  My husband is a F1 fan and we not only go to the race here every year, but also have been lucky enough to go to several races overseas.  As you’d expect the food on sale at the track varies from country to country.   So far, unsurprisingly, Italy has had the best.  Here in Melbourne it’s all pretty much heavy duty fried things so I usually take a lighter lunch for us.  Tomorrow I’m making these Frittatas to take……..
