Since our trip to Spain and Portugal last year I’ve become very fond of chorizo sausages and am using them in all sorts of dishes. This week I made Spanish Beef with Chorizo in the slow cooker and I really like them sliced and fried in cider with a glass of wine. So adding them into hash browns can only be a good thing.

BAKED BEAN HASH
My daughter and her family have been caught up in the latest Melbourne hotspot lockdown and are now faced with another four weeks of social isolation. It’s hard for them to return to the conditions that most us us have now been freed from, but one of the positives of the last round was that our lovely 9 year old granddaughter cooked lunches for them. So I’m posting this easy hash brown and baked bean recipe for her to try this time.
BOUNTY DAY PIE
So what is a Bounty Day pie you’re asking……well according to Wikipedia…. ‘Bounty Day is a holiday on both Pitcairn Island, destination of the Bounty mutineers, and on Norfolk Island. It is celebrated on 23 January on Pitcairn, and on 8 June on Norfolk Island, the day that the descendants of the mutineers arrived on the island’. I guess this is a pie they make to celebrate the day, although it does seem fairly similar to a Greek beef and spinach pie – don’t suppose it matters what you call it, as long as it tastes good.

Or in French, Oeufs a la tripe………. I think it’s been translated without the word tripe in the title as, if you’re like me, that conjures up quite unpleasant childhood memories of a flabby, tasteless blob covered in white sauce. I’d much prefer this variety, although I think a bit of cheese, maybe gruyere, would make it even better.
PUMPKIN DAMPER
Not sure you can get much more Australian than damper, especially if you serve it with a lamb stew. Originally it was a simple flour and water mix baked over a campfire, now recipes like this one have gone a step further using wholemeal flour, cinnamon and pumpkin. It still goes well with lamb though.
