This is another hearty pudding for the cold winter months. It’s almost a cake with banana filling and would probably be quite OK eaten cold or warmed up in the microwave.

TOPSY-TURVY APRICOT PUDDING
Dessert recipes using tinned fruit have gone completely out of fashion, but they’re still worth trying when fresh stoned fruit is out of season. A pudding like this makes a warm and filling dessert – especially in the colder months.
SESAME CHEESE BISCUITS
One of our good friends always makes a batch of cheese biscuits to serve with drinks whenever we go there for dinner. I confess I’ve copied the idea, but make this version with sesame seeds instead – both taste great.
CHEESY WALNUT FRENCH TOAST
French Toast or really fried bread with cheese and walnuts? The Wikipedia definition of French Toast is “a dish made of bread soaked in eggs and milk, then fried” which technically this is, but still for me French Toast has to have cinnamon and sugar or at least something sweet, not cheese and walnuts………..
COCONUT FRUIT CAKE
I’ve lost count of the number of fruit cakes recipes I’ve read over the years, but this is the first one I’ve seen with a cup of coconut in it. It could be an interesting change and as it’s a quick to make, it’s probably worth trying out.
BUTTERSCOTCH PUDDING
There’s no picture with this recipe so I thought it was going to be one of those wonderfully stodgy baked puddings. Instead I was surprised to discover that it’s a much lighter dessert – butterscotch with a meringue topping. It would be wonderfully sweet and just screams out for some cream on top.
BACON AND EGG BASKETS
I like this idea of a bun filled with bacon, eggs, onion and cheese. I think it could also be good cold, but then I love cold egg and bacon pie – especially at a picnic.
CHOCOLATE MACAROON DESSERT
No, this isn’t a recipe for just chocolate macaroons – it’s actually a chocolate dessert with macaroons on top. It’s a new one to me. It’s cooked in individual souffle dishes with a chocolate crumb base, a rich chocolate/coffee sauce and topped with coconut macaroons. Definitely one for the chocolate lovers.
CHOCOLATE BROWNIE FLAN
Served with lashings of cream this combination of a chocolate brownie in a pastry case would be pretty delicious, although I’m guessing it would be fairly rich – maybe just a small slice?
COCONUT FISH SOUP
Mum seems to have collected a lot of booklets from Sun Rice Australia I suspect she went to one of their cooking demonstrations. This recipe has a great combination of rice, spices and seafood all in a coconut sauce. It’s a meal in itself.
