CHOCOLATE ALMOND CAKE
I decided this week to hunt out recipes from Mum’s collection that you could make without flour, pasta or rice, which sadly panic buying wiped off the supermarket shelves last week. I found this Chocolate Almond Cake, it’s heavy on eggs, but if you have enough to make it I reckon it will cheer the family up.
CREAMY ONION AND CHEESE SLICE
ORANGE APRICOT RUM SLICE
SPICY FISH STEW
This was one of the Women’s Weekly prize winning recipes that Mum saved, although I don’t think she ever made it as my father liked his fish fried in batter and wouldn’t have appreciated this spicy version. CHICKEN AND HAM LOAF
POTATO CAKE -gluten free option

I’d much prefer this variety, although I think a bit of cheese, maybe gruyere, would make it even better.
FEDERATION CHICKEN SALAD
This creamy chicken salad has a light curry flavour and is especially good made with a barbecued chicken. I’m not sure that I’d serve it on a fruit platter, as we’re not all that keen on fruit with meat. I’d serve it in a salad bowl with a green salad accompaniment and maybe throw in a handful of toasted almonds, but however you serve it it makes a change from plain old cold chicken.
