CHRISTMAS LEFTOVERS – Turkey/Ham Spread or Dip

This is the last of the Herald Sun’s ‘Second time around’ ideas for Christmas leftovers I’m posting today, but it’s a good one.  Turkey or ham with mayonnaise and sweet chilli sauce and mustard to give it a tang and celery for a crunch.  I think leftover chicken would work just as well too.

CHRISTMAS LEFTOVERS – Mushroom and Ham Toasts

This week’s recipes come from a Herald Sun cooking page with the title ‘Second time around’.  After all the Christmas cooking it’s great to have leftovers, but you do start to run out of ideas on how to serve them.  These toasts can be made using ham, turkey or chicken and that makes them a winner.

CHRISTMAS PLUM PUDDING TRUFFLES

I usually make shortbread, apricot balls and a couple of different types of rum balls to celebrate the festive season, so this recipe for Plum Pudding Truffles caught my eye.  Not sure I’ve got the time to make them this year, but they do sound pretty good, maybe next year.

CHICKPEA CASSEROLE WITH POTATO DUMPLINGS

You can tell this is an old recipe as it gives directions to soak the chickpeas overnight.  Of course you can still do that, but it’s much easier now to just buy tinned chickpeas.  It makes the recipe a lot quicker and easier to make as you can cut out the first couple of steps and go straight to frying the onions, garlic and pepper.
