Back in the day Christmas cakes and pudding were often made using lard, but that’s not easy to get these days and most recipes use butter instead. This cake substitutes copha for lard. I haven’t made it, but think I might do it next year as it sounds interesting.
This sounds like the recipe I have been looking for. My mother always made the christmas cake with copha back in the 1950’s – 60’s. It was a very nice cake, but I haven’t been able to find the recipe, I am going to try this one. Thanks – Pam
