When I read this recipe my first thought was to use smoked cod, but of course that’s only one type of smoked fish. You could also use smoked trout or smoked salmon, really whichever you like best. Served with a salad it would make a great summer dish.
You can see from the typing that this is an old recipe. I used to make it back in the 70s and 80s and serve it as an entree with thin slices of toast. It was cheap and easy to make – ideal. I rediscovered it this year and now make it to have with drinks. It freezes well so I just put out what I need and keep the rest for later. If you don’t want to do that you can easily halve the recipe.
Mum and Dad both loved ice cream, so Mum made a lots of varieties. She added cherry ripe bars and nuts, chocolate mint bars and a lot flavours to plain ice cream, but I don’t think she ever made this super chocolate one. Chocolate ice cream, mars bars, milk choc bits, white choc bits and dark chocolate – a chocolate lover’s dream I think.
I confess to liking salmon, whether it’s smoked, baked, grill or even tinned, so that’s probably why I really like this salmon pate. You need to use red salmon to get a good flavour, that makes it a little more expensive, but it does make a good amount. As it says it’s quick, easy to make and everyone seems to like it. Also, leftovers are great on toast this next morning!!!
When my children were at primary school I helped put together a cookbook as a fundraiser. The school community were asked to send in contributions and we ended up with lots of great recipes. The mother who sent this one in added the note about it being a good ‘first baking’ cake and it definitely is. It’s been made many times in my household by both the kids and me. The added bonus is that it also tastes great.
